Classic Black Bean Breakfast Burritos

These classic black bean burritos are the most perfect protein filled vegetarian breakfast. They are protein packed with things like eggs and beans, and also include plenty of fiber and healthy facts with the inclusion of avocado and roasted vegetables. Lastly, it checks of the carb box with roasted potatoes and a flour tortilla. Additionally, they're perfect to make easily customizable which means it's a dish everyone will like! Burritos are also one of the best freezer meals meaning it's great for big batch meal prep is places like food kitchens such as Miriam's Kitchen. Here's a more detailed breakdown of some of the ingredients:


  • Eggs – High in protein and fat; yolks add richness and calories. Adding cheese also increasing the protein and fat content as well! Also eggs are a complete protein!

  • Beans – Combo of protein, carbs, and fiber; super filling.

  • Avocado – Full of healthy fats = high calorie, creamy texture.

  • Potatoes/Hash Browns – Carb-heavy; fry them in oil for a calorie boost. Tortilla (esp. flour) – High in carbs and often fat; large ones can be 200–300+ calories! Perfect for people eating only 1-2 main meals a day.

  • Oil/Butter (for cooking) – Pure fat = high calorie boost with just a small amount.

  • In total we’re looking at anywhere from 30-40g of protein for a medium size burrito and even more the larger the tortillas are.


Ingredients:

  • 1 potato

  • ½ yellow onion

  • 1 clove of garlic

  • 1 tsp salt

  • ½ tsp pepper

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 can of black beans

  • 1 tsp paprika

  • 1 tsp cumin powder

  • 5 scrambled eggs

  • 3 tbsp heavy cream/milk

  • 2 avocados

  • ½ lime

  • ½ jalapeno pepper

  • 4 Large Flour tortillas

  • 1/2 cup sour cream


    Steps:

    1. Begin Preparing the Fillings

  • Dice 1 small potato as well as 1/2 yellow onion

  • Roast in oven on 350 for 20 minutes -> gently mix with olive oil, salt, pepper, and garlic powder, and onion powder

  • Begin cooking beans: add ½ yellow onion and 1 clove minced garlic to a pot and cook until onions are soft (3-5 minutes)

  • Then add 1 can of black means and add salt, pepper, onion powder, garlic powder, cumin and paprika


    3. Prepare fillings

  • Make scrambled eggs: Scramble eggs and milk/heavy cream together and scramble in a pan with butter

  • Make guacamole: mix two avocados together, dice ½ jalapeno pepper, and add in juice of ½ lime


    4. Assemble

  • Warm up 1 very large flour tortilla

  • Add in the different fillings: eggs, beans/veggies, and potatoes

  • Eat as is or re-cook on pan with a little bit of oil for 1-2 minutes until golden brown


    5. Enjoy

  • I like to enjoy mine with a side of jalapeno lime crema! It's super easy to make just combine sour cream, lime, and diced jalapenos into a bowl and mix until well combined
