Fried Tofu Summer Rolls

Oh my goodness I can’t say enough positive things about this recipe. This recipe is so delicious and so easy to make, anyone can do it! It’s also super simple to change so everyone can enjoy it, whether that be switching up the fillings or changing the dipping sauces. This dish is also high in protein because of the fried tofu (complete protein) and includes a lot of essential micronutrients (vegetables: cucumbers, carrots, herbs, ect.) All in all, I highly recommend you try this one especially if you’re just getting introduced to tofu or plant based dishes - 10/10!
Ingredients:
Spring Roll Wrapping sheets
1 handful Basil or Mint
1.5 sliced Red Peppers
1 cup cooked vermicelli noodles
1 block of extra firm tofu
1 cup of panko bread crumbs
1 large cucumbers
½ cup shredded carrots
1 cup of flour
2 eggs for vegetarian or water/cornstarch for vegan
Peanut Sauce:
½ cup peanut butter
⅓ cup soy sauce
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoons chili oil
2-3 tablespoons sugar, honey, or agave
1/2 tsp ginger powder
1/2 tsp garlic powder
Recipe:
1. Preparation:
Begin by cutting cucumbers into sticks
Shred ½ cup of carrot into a bowl
Press tofu for 10-15 minutes
Cut red pepper into strips
Cook vermicelli noodles (takes only about 3-4 minutes)
2. Fry Your Tofu
Cut your tofu into 6 slabs
Beat 2 eggs into a bowl
Put 5 tbsp of canola oil into a pan
Begin to coat your tofu in flour, then dunk in egg mixture, then coat in panko
Fry coated tofu slabs in pan for 1-2 minutes on each slide until golden brown and crispy Once cooked, place on a paper towel to dry
3. Assemble
Get your spring wrapper sheets and place in a plate of warm water, rotating for about a minute until see-through and soft In the middle of spring roll wrapper, add in your vermicelli noodles, vegetables, herbs of choice, and fried tofu
Wrap up your roll, like a burrito, folding each sides in and rolling it up
4. Peanut Sauce & Enjoy
Make your peanut dipping sauce by adding in peanut butter, soy sauce, chili oil, agave/honey/sugar, garlic powder, rice vinegar, and ginger powder
If it’s too thick to your liking, add in 1-2 tbsp of cold water until the thickness of your liking
